Q: What is the shelf/refrigerator life of this before and after opening? Its a large quantity so i dont want it to go bad.

Before opening, I've never had it go bad. I've purchased it in smaller bottles--I'm guessing either 750 ml or 1 liter, not sure which--and have never had a shelf life issue. There's really nothing volatile or likely to spoil; so long as you keep it tightly capped, you should be OK.

No. It's a cooking wine. There's no fructose corn syrup in it or any other sugar content in it.

Q: Is this the wine they use for velvetting beef?

Yes, it is one of them. You can use any rice wine to do it though, don't necessarily need this particular one.
