Q: Can I use this as a thickening for gravy?

I do not know. I have used rice flower to make a roux, but I use arrowroot to thicken gravy. I do not know how the bean flour in this mix would react.

Q: How does it compare to gluten free Bisquick?

Hi, I haven't used the Bisquick GF mix, but I really like Bob's Red Mill GF Biscuit and Baking mix. This mix actually makes biscuits that rise, rather than the "biscuit cookies" that I usually end up with. They are best fresh. I haven't used the mix for other baking but it makes good biscuits.

Q: the info above says no eggs needed xanthan gum but the recipes on the bag call for egg. Which is true?

Both are true. You can make dense hockey pucks without adding egg, but if you want the dough to rise and be lighter, add the egg.
