There comes a time in your life when you realize that excellent quality sharp table knifes and quality chefs knives did and with great satisfaction, brought back sanity and pleasure to severing and preparing great meals for the family. That first moment slicing was incredible.

I am a bit of a Japanese knife snob, but by no means an expert. . The knives are Japanese inspired, but made in China. The Aus-10 is a good stainless steel and on par with my lower end VG10 Japanese knives. A HRC of 60 is probably on par based on the steel, but it takes time to find out.They were sharp out of the box. I did a paper cut test and they performed pretty good. We used them on sausage, and they cut through the casing effortlessly with no pressure.The serrations should help them stay sharper longer on ceramic plates if the hardness is correct

No regrets
Very sharp - they do exactly what you would expect. This is my first time buying high quality knives and I don't regret it. Buy once cry once. I've typically always used literally the cheapest kitchen utensils/knives money can buy then end up throwing them away weeks later or far too soon while also dealing with poor quality so this is kind of a game changer.No regrets.
