My new kitchen staple
NIce. Every kitchen should have it. A bit pricey for string, but I couldn't find much of a better deal. It's a racket, I tell ya! I'm not sure how they size this stuff, but I bought size 22 and it was ok for a pork shoulder roast. Maybe too wide for a pork tenderloin, which needs it even more. Seems to hold up well. Tricky if the meat is seasoned beforehand, but I wrapped a plastic bag around the meat, put the netting over that, then removed the bag. Worked well.

Perfect for wrapping pork shoulder for homemade ham
Just got done netting a bunch of ham, and boy are my arms tired. The pork shoulder I wrapped were about 10 lbs each. The size 22 fit on their nice without having to feel like I was trying to fit a 10lb ham in a 3lb bag. Pro tip, work the netting to the middle of the pork shoulder and work out from either end. Took me a few to figure that one out, but it helped me. The material is strong, and I was never concerned about it breaking.

Good for pork back loin
Finally got to use today on two pork back loins that have been EQ cured for 14 days. The meat was firm so I’m not sure if it helped or worked against me. They were tight to get on. However the point of using them is to hold the meat firm so it does what it supposed to.
