Super Sharp
Great Knife, Super Sharp.Wanted it to slice up lettuce without it turning brown, Would be better with a sheath to protect the blade, I put it in the bottom half of the box it came in, and luckily it still fits in my cutlery draw, I would HIGHLY recommend.

Excellent Knives if you know what you are doing with them. NOT FOR NOVICES.
Very Very Good Knives. Please be careful with them. ONLY USE PLASTIC CHOPPING BOARDS, as they will seriously injure you if you mistreat them. Never use them on Glass chopping boards or on plates.

The 6" Shenzhen Chef's Knife is a great product, and the price s a great deal easier to pay than the price of a comparable Kyocera knife. A couple of years ago I decided to buy a Kyocera knife for my wife, who makes hundreds of egg rolls many times a year. Her steel knife was no sharper than a butter knife after innumerable rounds of vegetable prep for her egg rolls, and I thought I could make her chore easier. It turned out that the knife was just what she needed, and that it made the job a far easier. Well, that was 2 years ago, and despite the fact that ceramic knives hold their edge better, even they get dull. When looking to get her another new ceramic knife, I stumbled on the Shenzhen Chef's Knife. Ceramic is ceramic, so I figured out that this would work as well as Kyocera. It turns out that it is comparable in every way, but the price. Both knives are ergonomic, and both knives are sharp enough to shave (when new). I have since discovered that there are sharpeners made specifically for ceramic knives, which may lengthen the time between further purchases of these excellent knives. But, if you don't have one, and you need a truly great knife for slicing vegetables, fruits, and even boneless meat, this is the way to go. If anybody asks me for my suggestion, I will enthusiastically recommend a Shenzhen ceramic knife. Get one and see if you don't find how nice they are. UPDATE: It is now Feb 19, 2021, and we still have our knife. It's not quite as sharp, but is still in one piece, and functioning. Reasonable caution will prevent chipping or breakage of the tang. Sudden lateral forces, or trying to use it like a cleaver, will likely break the blade. The ceramic material is far stronger than steel, but because it is far higher on the Rockwell hardness scale, it is much more brittle. After 10 years, I'm still happy with my purchase.

Great price, arrived quickly, in good shape. Like the handles: easy to cut without them sliding out of the hand. Chops vegetables well without needing sharpening over time. Prone to to blade chipping.

I love these knives! Before buying them, I had the opportunity to try them. I work as a cook/demonstrator in an upscale grocery store and do my own prep. A coworker brought in his set that was several years old. Incidentally, his had the "old style" handles which, from reading the reviews, can be prone to breakage. His had never broken and there were no chips on the blades, even though he said his set was about 5 years old (and he paid more than I did!) and he uses them at home as well as work. Obviously, use the knives for the intended purpose and they will present no problems. I used his for several weeks and found them exceptional for cutting produce I did a cursory on-line search for other brands, and went to some kitchen stores to check out their wares. I decided to stick with the Shenzhen for the quality, quantity, price and customer service. I'm glad I did. I use them every day, particularly the slicing knife. It makes super thin slices of tomatoes, onion, and citrus fruits; cuts around the cores of broccoli and cauliflower to give you perfect florets, and the larger knife works great for a perfect dice on cucumbers, zucchini, and potatoes. I've diced bacon, trimmed fat from poultry and other meats, and cut thin slices of pork, beef, and poultry for stir fry dishes. I have not, nor will I use the knives to cut hard squash, sweet potatoes, or hard cheese (works well, however, on softer cheddars, swiss, etc.) I have my Wusthof for that. I've had these knives for about two months and intend to take them with me when trailer camping. Buy them, you won't be sorry. A couple other things: they clean up easily, mostly with a quick rinse after use (no knives should go in the dishwasher!) and since they are super sharp (my husband won't use them) you may want to invest in a cutting glove to protect your opposite hand, as we do at work.
