How much dough by weight per bun?

You can't use weight because it will depend on your bread base mixture ingredient content. Just fill up each depression.

What is the length & width of the pan? I want to purchase a wire rack to place underneath it for baking.

It is the size of a half sheet pan(13x18).

Could this be used to make gluten free buns? The dough is more like cake batter to start.

I think it can. I use mine to make low carb buns using a batter made from egg whites. Sometimes there is slight leakage but I put a piece of parchment paper between the silicone pan and the baking sheet which makes clean up a breeze. (I set the silicone pan on a metal baking sheet for stability getting the pan in and out of the oven).
