Bacon re-rating
Have tried multiple bacon vendors. This is my 2nd order from Johnston. Excellent unique salty flavor. However, once the rind is cut the slices can be as narrow as 3/4" or less. Perhaps they sell their higher quality (better uniform slabs) to Professionals. Unlikely to order again, and too bad as it has a good hard to find cure.I have subsequently ordered this product 3 more times. Thickness of slabs vary. Most recent order was about the same thickness as Hormel, Meyers, or Farmland contravening the first paragraph above. Also, I recently purchased a new Jenn-Air Gas oven. Cooking this product with a shallow roasting pan using parchment paper liner one level down from the top rack level on Oven Roast setting @ 375 degrees produces a Wonderful... and I mean Wonderful bacon. So good I took the trouble to change my rating to 5 stars from 2 stars.

If You Like Salt, You'll Like This
I bought this bacon for a backpacking trip in the High Sierra, as it doesn't need refrigeration for eight or nine days, or so. However, I cooked it several times at home prior to the trip to give it a dry run. Yuck! A large percentage of it is fat--that is not the end of the world, though, because you can cut the fat off. What I found wholly unacceptable about the bacon is that it was sooooooo salty! It tasted of pure salt! The second time I even cooked it in water for awhile and then poured it off, thinking that might take away some of the salt. Nope. I found an alternative on Amazon--still fatty, but not nearly as salty, and with the same keeping qualities.I can't recommend this bacon at all--unless your favorite food, and favorite flavor, is salt.

Really good
Just sliced and fried up a blt. I washed the bacon first then chilled in the freezer for 20 minutes before putting it through my slicer. Still a twinge salty but I didn't wash it that much. I cut a few extra thick pieces and threw them on the the grill with my tri-tip. Everything was very good. I will probably slice up some more for friends and family it's definitely different than your average slab of bacon.I don't think it's as good as my homemade bacon but its still worth every penny.

Tastes great
Gave this as a gift to my father who is a bacon fanatic, he loved it and said it was one of the manliest gifts he had ever received.on a flavor note this bacon was extremely salty. (but that's how curing and aging works)

YEs! YES! YES!
This is slab bacon, not sliced bacon. There are four sacks of slabs that are vaccumed sealed. I hung mine along with my Johnston county ham in the atic. I did slice some off for breakfast this morning. This is the best bacon I've eaten since my grandad cured his own! Get some, you will not be sorry!

Good stuff
This is old America good smoked and preserved slab bacon. Salty, flavorful and real! This is the way food is supposed to taste, and you can always soak in cold water changes to mellow it. Or not, this stuff is great. Dice it or add a big chunk to the crock pot and cook up some beans. Any beans!!

tastes like salt port which is not what slab BACON is ...
I bought this as a gift for my husband who is quite an expert on slab bacon. It did not meet his standards at all; tastes like salt port which is not what slab BACON is about. Will never order this type of item on line again

Pure lard
I expected a real quality bacon and instead got a package of lard. Rind was on and no big deal. However, when bacon was cooked tasted just like cracklings-not bacon. Could have ordered 25 cents of pork rinds and received the same thing.
