Great book to have as it has a lot of useful information on it.

I’m crazy in that I buy pretty much every single book on Amazon that I can find on a topic, and honestly I’m happy that this was the first book that I received and read on pressure canning. There’s nothing at all wrong with prepping for emergencies, but I found this book extremely helpful and I love that Diane comes across like “a nice lady/mom” (no offense!) opposed to this being wrote in an end of the world tone. I’m actually shocked to see all of these reviews saying that this book is unsafe. It has so many sections throughout talking about safety! I’m still paranoid about food safety in that I’d never trust my girlfriend to do canning since she won’t spend the time to learn how to do it correctly, but this book literally helped me get over the fear of the dangers with canning (botulism) because it explains things so well! I haven’t read all of the reviews here, but I recall seeing a negative review on a canning book (not sure if it was this one) that was along the lines of, “Beware! This author has a recipe for pumpkin and that’s deadly according to the USDA!” It’s completely misleading. Yes, you surely don’t want to can an entire dense pumpkin! This book here literally explains how to do so safety. It tells you exact types of pumpkins to use and specifically how to process/chop it up into small cubes (plus the exact pressure and time required which is much longer than most other recipes) to make it safe.

Já repassei o livro do inicio ao fim e pude ver que é um manual completo sobre o assunto. Esclareceu muitas duvidas, trouxe receitas muito práticas, e, com certeza vai ser muito útil para mim!
