Quality Country Ham
It's always a crapshoot when buying country ham products from an unknown vendor. The quality can be inconsistent even from people you've dealt with before. I was just in North Carolina in March and bought 3 packages of of ham from 3 different suppliers at the local Red Lion store. On one was even halfway satisfactory so upon my return home to home to Ohio I decided to try this Phillips Brothers I saw on Amazon. What a pleasant surprise. The shipment arrived within 2-3 days. I could tell just by looking at the meat that these were quality center cuts. Not dried out, or discolored with very little fat. The taste is perfect. Just the right amount of salt without numbing your mouth so this doesn't have to be soaked or rinsed to remove the excess brine altough some people may want to for their particular taste. I've fried this, nuked it and grilled it on the George Foreman and it's really good any way I prepare it. My family is from North Carolina and we'd bring home a huge ham every summer from one of the family member's smokehouses. This Phillips Brothers product brings back fond memories of those homemade hams. I will buy this again.

NOT FOR US
I have never had country ham before, and I was curious to try it. I'm glad I didn't purchase a whole ham, because this was the saltiest thing I have ever tasted. It also has a chewy texture and odor that is unpleasant. I can understand this curing method before there was refrigeration, but in this day flavor and texture should be the important issues. I will buy proscuitto to satisfy my urge for slightly salty, unsmoked pork - it isn't any more expensive than this horribly salty ham and is much more delicate and delicious.

A bit too salty a bit too thin
I found this very salty, saltier than other country hams I have tasted. In addition it was, in my opinion, cut too thin. As a result, when frying it, it became a tough piece of meat. I also felt the product did not have the full ham taste I was looking for. This is not a product I am going to buy again. I tried it once: twice would be far too much.
