Which steak knives would you recommend to go with this set?

Henckels International Classic forged ~ $100/4 same shape full bolster Spain 39360-000Be aware that they are sold only in multiples of 4 as sets, and you have 6 spaces. I have paring knives etc. in those slots and I keep the steak knives in the flatware drawer.Of course; the Pro S would be my choice if I had a budget for them at $50 ea but, I prefer the International classic for the price $25 ea and, it's nearly identical to the pro S, except for its country of origin and a couple of minor tech details.ie. blade angle and hardness.The twinn Gourmet knives have the same shape but, without a full bolster. They are stamped and, not forged but, they're cute and if you keep 'em in a drawer... who cares. At $12 you can buy all 6 and 2 spares for $90. And they'll look at home in your block. Now... If you ever invite MY mother-in-law to dinner...Hope this helps.

Is the block color pretty accurate here online? I did not want the lighter color wood..

are the kitchen shears and the sharpening steel made by zwilling Henckels as well?

Yes. I went and checking the markings on both of mine and they are both stamped with Zwilling J.A. Henckels mark.

Is there an extra slot with the 7 piece set, and if so, would the professional zwilling j.a. henckels 8 inch bread knife fit into it?

This set includes a 16-slot block, so there will be several empty slots. One of the uppermost slots will fit an 8" bread knife. However, this block is designed to fit Professional "S" and other Zwilling/Twin knives. Pro style knives with the arched bolster will not fit properly and require Pro style blocks as well.
