What is the best size dowel for stacking teir cakes

That depends on your cake, but I would not use wooden rods as they will absobr any moisture from the cake. These are more for arts and crafts. I would look up cake rods as they are normally hollow and a sturdy plastic - one so they don't add weight to the cake and two so they don't absorb moisture.

Where to store these dowels when not in use? Some states are very dry but does it matter?

I live in Va I place them in a plastic bag and store them in a dry room temp closet no issues yet
