This product adds excellent savory flavor to sauces, soups, rice pilafs. A little goes a long way, but it is very effective to boost the umami of a recipe.

Fine products like wine, cheese and charcuterie require skill and time to produce. Colatura is similar. You get what you pay for. I will buy it again.

This is a wonderful Garum fish sauce.I’m honestly not a fan of that nosy fish market “fishy flavor/smell” that so many people love... But, I do understand its attraction and how it is absolutely correct on certain Italian dishes. This sauce gives you the perfect condiment to balance between those people with delicate pallets (like myself), and those who like a hearty fish-market experience.It is very mild with a subtle fish flavor—that when used sparingly—can bring out what must have been the essence of a Roman banquet.Use a few drops on your Caesar salad for a light anchovy taste. i use it in pasta sauces i make with fish: i add only 1 T of it to a small bottle of clam juice, sauteed onions and garlic, and flaked fresh fish of choice. it makes this simple dressing for pasta into miraculous. it marries well with lots of grated regiano.

I've ordered this before. It's a pricey little bottle but so worth it and seller wrapped and shipped it perfectly and promptly.

We use this primarily to infuse our tomato sauce. You don't need a lot to get a robust flavor.

It arrived today, and sadly the bottle was broken and had leaked all over the packaging. I need to figure out how to request a replacement.

On the mild side and rather expenssive for such small bottle. That said, it has a lovely flavor and combines very well with pasta.
