This book had been a lifesaver! I dreaded going gluten free and thought we were going to have to give up some of the Baked Items that we love. I bake recipes out of this book and nongluten free people ask for my recipes! It completely rocks! The Biscuits, the Gingersnaps and the Chocolate Cake are some of our favorites!That said there are a lot of steps to get to the final product. The recipes are based off of 3-4 Main mixes that you need to mix ahead of time and store. I just purchased some small food grade tubs and store them in that. I have a Basic Flour Blend, A cookie Mix , a Quick Bread Mix , and a Cake mix. Once you mix the mixes it does then become "Quick and Easy"It probably isn't a book for someone who wants to just open a box and cook. These are "from scratch" recipes and they are totally awesome!This book is a MUST HAVE for a from scratch gluten free baker!

Everything we've tried has been really good.
My family has loved everything out of this book so far. My 8- year old is a hard sell so this is impressive to us. There is a wealth of very good, helpful information in the beginning of the cook book about why certain ingredients are used, if you don't have them how to substitute and general information about principles of cooking GF. Why didn't I give it five stars? The only down side is the need to make several different mixes in advance and have them on hand in the pantry so the recipes are much quicker at meal time. While this may seem to some a brilliant idea, and it is, it's not terribly effective for me since I forget to have it done ahead and am scrambling to make the mix and then the recipe which takes time. When I do have the mix handy it's really wonderful ... especially the waffles!

My #1 go to cookbook! A must have!! Seriously!
This has been my most used cookbook in my gluten free (& regular cookbook) collection....used it so much I had to replace my falling apart copy recently. Well, actually my husband bought me a new copy for Christmas because he knows how much I love it! I keep Carol's flour blend, cake mix, cookie mix & muffin mix on hand at all times. My kids think the muffins are the best thing ever and I've done so much with them besides just making blueberry muffins! The Jamaican Jerk Chicken with Corn-Mango Salsa recipe & the planned leftovers to use in the salad version with an orange vinaigrette....though lots of chopping...gets rave reviews whenever I make it. I love the smoky chile rub used in the smoky southwest pork tenderloin recipe with fresh peach salsa is mouthwatering too. The Thai pizza I could make over & over....the grilled Chicken Burgers with spicy Aisan Sauce...yum! I recommend this book to everyone!

GF Quick and Easy
Good recipes, but nothing gourmet. Easy to read, quick to prep/cook. At times, difficult to follow. Recipes can be unclear in instructions - do I add everything to crock-pot and put on low or some of the items? Although the cover is beautiful, there are no pictures inside. Would have appreciated a few nice pictures or illustrations along the way to break up the book a little bit. I did like the education on gluten, quick and easy cooking short cuts, kitchen/pantry staples, and the two month menu sample. The idea of planned-overs, instead of left-overs is brilliant. This makes my life as a celiac afflicted person much easier. The family likes the recipes and can't tell the difference between these and non-gluten foods. Recommend this book.

Wonderful recipes, lots of good ideas
This is the cookbook I chose to give to a newly diagnosed friend - great recipes, healthy and easy to find ingredients - and I like it so well I've pre-ordered her new book even though I don't bother to consult GF cookbooks that much any more. Fenster's oven-fried chicken is the best I've ever tasted, her lasagna doesn't require you to cook the noodles first, etc., and there are some imaginative dishes you don't normally see (even schnitzel!). Everything I've tried has been great. The only complaint I have about Fenster's book is that it would be helpful to have a chart giving ingredients for making 2, 4, etc. cups of her flour mixes. Her bread mix recipe makes 12 3/4 cups and includes 4 cups of another of her mixes as an ingredient - really a pain to calculate ingredients for the 3 cups needed to make her French bread. But I must admit the results are worth it. Her bread's very easy (especially if you have an electric oven - it rises while the oven heats) and has a great texture.

complicated and demanding
OKAY. This was the very first gluten-free cookbook I bought and "read". I found myself, right away, flipping back and forth, (like looking up reference verses in the Bible), trying to figure out what the actual ingredients list was. The author says NOT to do these recipes differently than she has published them. Actually gives warning that if you don't, it may not work out. Doesn't give us long time cooks any credit for understanding wet/dry/rising ratios. I REALLY wanted to make this cookbook work. It took me quite a while to thumb through the book to find all the "basic" flour mix recipes called for in each recipe. They are sprinkled throughout the book, not collected in any one location. There is one foundational Flour Blend. Then there are 5 more mixes that use the basic plus. Example: Pizza crust recipe calls for "Carol's Yeast Bread Mix", "Carol's Yeast Bread Mix" calls for "Carol's Flour Blend". So, you are flipping from pg 192 to 184 and then to 37 before you can assemble a list of all of the ingredients. After spending a lot of time figuring out the mixes, I made the cornbread recipe. It tasted pretty good. (I omitted the sugar - I have been altering recipes to remove sugar for years). I just don't find it "quick and easy". Sorry.

Just the info I needed
I just started a gluten free and corn free diet and this book gave me the information I needed for every day cooking.The information in the back of the book on all the different types of gluten free products and what you use them for is one of the most important parts of this book for me. There is another section with replacing this for that info and that is equally as important.The recipes are practicle and in my busy life I appreciate their simplicity. Although I must be careful because there are many recipes which include corn products. However, many recipes do not include corn and I am greatful for them! I can't wait to get cooking...

I have been having issued with what to cook since having to go gluten free. This cook book is everything I need.
