I use these for crawfish etouffee. They work great, good texture, and flavor. Devaining is by machine and 98+% perfect, but for anyone squeamish, give the tails a quick clean up and good to go. Pricey but will by again.

Made Cajan Chili with sausage, chicken and these crawfish tails. Everyone loved it. Cannot wait to make gumbo in a couple weeks. The crawfish tails are a nice bite size and very tender! Bought several pounds and when I run out, I will be buying move from the seller. As for the delivery, it was on time, very well packaged and 100% frozen when I got it on the east coast.
