Finest cookware going.
The heat response is excellent with copper and as far as handle material either 1) reduce heat, hi heat is not needed, 2) protect hand if you insist on cooking with high heat in this pan (you know just like people have done for 100s of years with cast iron and continue to do so to this day me included with my extensive lodge all uncoated iron ovens and skillets. I paid extra for a heavy iron handle for a stainless clad sauce pan on last order versus the cast stainless. Thanks but no thanks on that. Since these are heavy as they are supposed to be I'm not sure a sauté pan is ideal as far as moving it about while cooking. I'd opt for the rondeau pan of similar size. It's a very versatile pan and def better in the oven with two short side handles if space is an issue for small home ovens.

Cooks great, handles are worthless
Although this pan cooks very well, the handles for both the pan and the lid conduct heat nearly as well as the pan. They both quickly became blistering hot (essentially the same temperature as the pan) and nearly unusable. It is appalling to me that cookware that is as expensive as these could not be designed with functional handles. In the future I'll stick with All-Clad.

Made to last a lifetime
Mauviel produce beautiful Copper pans that make cooking a meal pleasurable as well as easy. They are also amongst the best performers - measured in terms of cooking results, ease of washing up and appearance over time.Copper pans (lined with stainless steel) offer very good levels of heat conduction and are easily controlled. You never need to (or should) use a high heat as everything cooks brilliantly at lower temperatures and, most importantly of all, nothing ever sticks to the surface.The pans are weighty and some of the larger ones can tend to be difficult to lift and pour from once full. This 28cm saute pan is very weighty and I struggle to lift it when empty let alone full, but it is manageable, although if dropped I am pretty sure it would damage anything it hit en-route to the floor. In addition, you do need to take care when lifting as the cast Iron handle gets hot fairly quickly; it can be cool in the grip initially but the core temperature can be much higher and require setting down rapidly. You tend to get to know through experience when to use a tea towel around the handle... As it has a cast iron handle, it can go from hob to oven safely.The pan has to be hand washed; it cannot go in the dishwasher, so a little bit more time is necessary to clean up after food preparation. But the interior surfaces are so very easy to clean - as they are lined with stainless steel you can use a scouring pad if necessary without detriment to the surface (don't use one on the Copper though as it'll scratch).Copper surfaces will not retain their sheen without a little bit of care and, even after just one use, a pan will look tarnished - a real kaleidoscope of colours. I always use Mauviel's Copperbrill cleaner and that restores the sheen to the Copper with minimal effort. It is pricey but restores the Copper to like new with only a quick wipe over with a damp sponge (one is included in the pot), using very little Copperbrill in the process.

Love it!
This pan could not be easier to clean. Even if I do get food stuck in the middle of the pan the steel interior will make sure that if I soak it for a little bit I can scrape it right off with a wooden spoon. Easy clean every time. The copper outside means that, as soon as I take it off the heat, the temperature in the pan drops immediately making burning food less likely anyway. This product is a you get what you pay for in the positive sense.

IT WILL LAST A LIFETIME,THE BEST.
purchased the 24cm saute pan with lid for £200 due to my local shop wrong pricing,but found that i needed the 28cm 4.6ltr cooking space and boy is this a big sauté pan it cooks full meals with room to spare, purchased this from amazons warehouse deals,but be aware this pan is very heavy great quality and worth every penny buy with a smile ..

Great present for a serious cook
I am told it's being used on a daily basis and threats have been issued if anyone who mistreats it.Be aware it is heavy (thats the point after all). The handle is massive and needs to be.I suspect that over the next few Christmases the rest of the range will be acquired.
