Q: Does it work the temperature of water or oil (in a pot, say)?

I tested it in hot water. It seemed to work just it does in meat.

Q: I need oven thermometer also.not need 2 probes. Could one be affixed for oven removing conection when not need oven?

You could put one into the oven and have probe coming out the door and put the thermometer case on side of oven if it is magnetic. There are magnets on back of thermometer box. Probes plug in and out. However,. Oven thermometers are very inexpensive. Personally, I would buy an oven thermometer and hang it from rack in oven. You will get a much more accurate reading.

Q: Can this be used for candy making?

The recommended uses includes candy and it has a temperature range of up to 572F so it will work for candy making.
