Good morning, As soon as you see steam coming from your pressure cooker, that is the when you know that the pressure cooker has built presurre, and is ready. When you see steam coming, you put the fire down, that will keep the liquid inside and your food tasty. If you keep the fire up after steam is coming, the liquid will evaporate and wont cook you meal properly. Best regards. Magefesa team.

Yes, this set contains 2 pots (4 and 6 Qts) with 1 pressure lid that fits both pots. That way you can choose which pot use depending on how many people is coming for dinner, and you can use the other body as a regular pot without pressure lid at the same time.
