Q: Does it cut all the way through to the cutting surface or do you have to push the butter through the wires for the last bit?

Yes you do, you have to push it down on a flat surface for it to cut all the way through. This is what I do. I keep the butter wrapping, On the counter. I open it, place the butter cutter on top of the butter. And I wait a bit because if the butter is too cold the cutter has trouble going through. Once it softens I push it straight down against the counter. Then I turn it upside down over the butter dish. Because it sticks to the cutter, I press the wrapper with the palm of my hand and the butter lands on the butter dish. Explaining it in writing makes it sound more complicated then it really is. I hope this helps.

I set a stick of butter to soften it a bit. This cutter is wonderful - it slices the butter all the way through! Sometimes, I may have to push the butter through the wires, but it's worth it!

Q: How soft does the butter have to be? Will this work for mushrooms?

Butter will slice while still firm from the refrigerator. Cheese needs to be soft enough to flex the "block/chunk." I have no idea about mushrooms.
