Q: I'm 5'7 125 should I do s or m?

I would think small. I am 5'2", 110 and I have the XS and I could have easily gone with XXS if that was an available option.

Q: Are these stretchy or more compressive?

I have only wore them once than once but I would say more compressive but comfortable at the same time. The material is not cheap it’s more on the thicker side.

Q: does the waistband lie flat? or does it dig in?

Lies flat for me. Potentially could dig in if size is too small.
