ESEE 4 in 440C Stainless is the one you want!
The ESEE 4 Stainless Steel model with the 3D G10 handles is a fantastic bushcraft style knife. Crafted in 440C stainless steel, it is much more corrosion resistant than other ESEE carbon steel models, and no coating to wear off over time. The G10 3D handles are fantastic, and are very comfortable. The large choil is great if you need to perform some finer cutting, feather sticks, etc. ESEE stands by all their blades for life, meaning if it breaks (not abused) they will replace it. I reviewed a ton of knives before choosing the ESEE 4. I think you will enjoy it as well.

Knife comes extremely sharp from the factory. Knife has good comfortable grip even with basket ball player size hands.

Great blade for the outdoors
Great for processing fish and wood. This stainless steel is the finish/material you likely want. Plastic handle is preferred to the other materials if you will be handling game/slippery product.Sheath is great with strong positive retention.

Excellent steel and fit and finish
I feel the price is on the higher end for a 440C steel knife but it does have Esee's lifetime warranty so I guess its worth it. It holds an edge really well and is easy to sharpen to shave sharp. I was very impressed with the quality of the fit and finish but took off a star for the handle design and the fact it doesn't have stainless screws holding the grip panels on. I'll probably buy stainless replacement ones but for the money it would be nice if they were on from the factory since it's a stained knife. Besides the screws I just find the handle shape a bit awkward. Everyone has different hands so it could be just me.
