Its year-long fermentation process brings out its fragrant, lively tartness and subtle herbal flavor.Use Oindo Ume Vinegar in place of soy sauce or seasonings. We expected and excellent product with the Ohsawa name
I have been using ume plum vinegar so long, I can't remember cooking without it. We expected and excellent product with the Ohsawa name, and it is just that. Delivery was on time and packing was perfect. Will be ordering again in about a year.

Very versatile
I am allergic to yeast and must avoid fermented products. Umezu is one of the vineparticularly enjoy daikon gar recommended to me. I drink water, hot or cold, with some umezu, use as seasoning pf vegetables, etc. I particularly enjoy daikon (very high alkali food) thinly sliced or in shoe string, soaked in umezu with a little bit of sweetness added.
