Will a galaxy s7 phone fit in this?

Yes! I have used it to securely hold my gen 6 iPad and my iPhone 8. Assuming the galaxy s7 size falls someplace in between both Apple devices, it should be secure!

I can’t get the mount to attach to the back of holder. How does it work?

There is a screw that extends from the flat portion - the holder. That needs to be attached first by screwing on, finger tight - the rounded adapter piece. I was able to simply screw it onto the back. The other piece that looks like a "U" or a "C" slides over the handlebar, is then pinched to put the end tabs together (looks like a tiny lightbulb) and it is screwed onto the end of the adapter. Screwing until tight.
