By chance does this void the Nintendo warranty or if it doesn’t work will Nintendo still fix it?

Yes, it voids the warranty. You've opened it up and swapped parts. Nintendo doesn't know if you've damaged something in the process. 
Warranty is only good for a year. If your before your year mark, I'd have Nintendo fix it. If over your year, then you may as well do it. Your going to also need special tools, a lot or patience, and watch the YouTube videos. Also these batteries can explode and cause a fire. They have an adhesive tape holding them in. They are usually stuck and will require care removing.

No it doesn’t Come with any tools. Just the battery.

If the switch battery is bad, would it turn on while plugged in?

Unfortunately for me no. I even had it charged for more than 4 hours and it would not turn out. Sad how the switch was not designed to function from a direct power source. If it is then the software or hardware has a flaw.

So I see that it says that this isnt a replacment battery for the joy-cons. But will they still charge if I replace the battery in the switch?

Yes.  I replaced my switch battery.  It had no impact on whether the joycons charge or not.   This battery works great and holds a charge for a very long time - very happy with it.  Make sure you get the Switch screwdriver to remove the tri-wing screws on the switch.  Not ordering that made me wait a week to replace this battery.  Just a heads up.
