Is this FDA approved for use to sharpen kitchen knifes and other food procesing blades?

No, it is not. If you want something food safe, you would need to use mineral oil. Either way, you should always wash your knife after sharpening in order to remove any metal shavings.

Does the 17 ounce size come with a spray head?

The 8 oz bottle does not. Just pour some of the fluid into a spray bottle. Spray bottles are all over the place. Most free.

Can this be used on a standard oil stone or is it just for diamond stones?

This is just for diamond stones.

What micron size or grit equivalent is this?

I don't believe it is a grit or micron size. I believe it is only an unknown to me liquid lubricating and enhancing the effectiveness of the diamond grit in use. I've tried it as an experiment òn the back side of a diamond tool with no grit to arrive at the above conclusion. After using this product I only use my diamond sharpening tools with this product.
