How many lbs of clamping force does this generate?

Without using a force gauge I can't specifically say, however I can confidently say it's we'll in excess of 1000 lbs. I've used it to lock 8/4 red oak boards 55" × 14" for hand planing and it locks them in without any shifting.

The bench side of my vice is not symmetrical; the bottom is about 1/16" thicker than the top. Won't hold work square to the bench. Suggestions?

I am not entirely sure what you are asking. If your vise does not sit square to your bench, then you should shim the vise to the get the correct position.
