How many risottos will this make? I am worried I will open it and never use by use by date and most gets thrown out...

You can make loads , you don't need a lot for each risotto , I usually make risotto's then freeze them , saves time later , always use squid ink before the due date .

once opened how long before it has to be used?

I opened it in the beginning of February and I've had it in the fridge for the past 3 months and it is fine. I used it last week to make squid ink tagliatelle and they came out fantastic. Will be keeping it until the taste is off regardless what it says on the package.

Hi. Im thinking of watering this product down - Is it possible to boil this ink in water and then bottle it?

when I make risotto I put the ink into the boiling stock, so yes, you can boil it with water but why would you want to bottle it, I kept my opened jar in the fridge for about 6 months before finishing it and it was fine.
