What are the temperature settings?

Is there plastic around the temperature sensor? It does not look like stainless steel. Also, how does the lid latch? Is there a plasric latch?

Yes, there is some sort of silicone gasket around the temperature sensor, inside it is all stainless steel. There is no latch for the lid. It is a spring loaded lid that opens when you press the button on the handle
