Do they eventually rust?

My is about two years old - no rust.

Is this good for elderly hands?

If you don’t have problems with scissors, you should be good with these. I find it harder to cut cardboard with scissors than to use these!

How to detach the two parts?

Just push the handles apart. One is clipped to the the other. Same goes with putting b g it back together just line up the slot and squeeze it back together

Can this be used comfortably by a left handed person?

I just tested that out for you by cutting a hunk of cheese with my left hand. I had no problem at all. I love this product!
