How filtered does the filtered water need to be?

The main thing is chemical free water. If you are using tap water there are chemicals in the water that kill bacteria purifying the water. These same chemicals can effect the kombucha brew. Reverse osmosis is best in this situation to remove the chemicals. If you are using well water or purchasing purified water it should be free of chemicals and ready to use as is.

What kind of tea(s) can i use with my scoby? i'm not asking for a particular brand but like what's the difference between barooti assam and others?

Almost any tea (camellia sinensis) will work. Even herbs like yerba mate can work, however with only herbs such as yerba mate you can brew a few cycles but then you need to add black tea or some other (camellia sinensis) to help the scoby grow. We find that black tea grows the best scobies.
