How can I replace the back paddles for the controller?

You can purchase replacement buttons and its just a few screws they sell a controller too pack that gives you the proper tools cheap.

Is there a faceplate that does not have a slick/slippery feel?

I do not know. But I haven’t had any issues with my hands slipping on the face
