It is a brilliant device for fermenting almost everything.
I bought it after Kenji Lopez-Alt recommended it in his book on the Wok. I've been fermenting using different glass bottles and valves for a while. I never liked the fiddling around to keep bits from coming up and landing with white yeast if I sampled my stuff along the way. My wife hates the smell of Kimchi, so I burp my container outside. I've fermented many vegetables and kimchis in it with superb results. Without hesitation, I will state that I believe it is the best device I have. Fido bottles that I use for fermentation are a great choice. They are easy to clean, can be stored in the fridge and microwave, and have no complicated parts. I can easily put them in the dishwasher without worrying about them hitting the rotor. There’s no need to fiddle with valves or deal with excess water—you can use less liquid, which prevents yeast or mold from forming. What more could a fermenter want? Two years later, I still believe these are the best methods for fermenting most things. Beware fragile

Für mich ein must have für Kimchi. Ich stelle Kimchi selbst her und seitdem ich dieses Teil verwende, fermentiert es sehr gut, es schimmelt nichts und es läuft auch nichts über. Nicht sehr günstig in der Anschaffung aber jeden Cent wert.

Works well, easier than trying to use canning jars.
I had been looking for a crock for sauerkraut, and finding them all a bit costly. I came across these in various sizes at a reasonable price and chose this one, the .9 gallon. I've made a lot of sauerkraut in it, and currently have pickles fermenting. It's very easy to use, easy to get the air bubbles out as well. I followed the suggestion of letting the liquid come out a bit into the first little surrounding area and just sort of setting the plug over the hole, not quite closing it. I also only snap down the two short sides of the lid. It still keeps dust out, but gives it some "breathing room to release the build up from the fermentation process. I would definitely buy more of these if I need them.
