Do these work well with piezo pickup?

I believe that they (500 k ohm) work with piezo, but it has been years since I've used that method.

Will these work for ibanez gax and is it hard to replace pots yourself? Mine are still soldered but the shaft broke off

Yes, these are OK for that guitar. You use 500K pots for humbuckers and 250K pots for single coils. They aren't hard to replace with a 35 to 45 watt soldering iron. Just unsolder the wires one at a time and resolder onto the new pot.

Will this work as a tone pot replacement for an ibanez gio 7 string?

It will "work" but it may be a different value than the existing one. If the existing volume pot is a 100k or a 250k, this will work the same, but it will have a different rate of change of volume as you turn it up or down.

Are this audio taper pots?

Yes. These are potentiometer Pots, 500 k. Most often we have 250k or 500k, the difference being how much treble will be bled off. For a Humbucker: 500k for a single rail: 250k. this will work in situations where you would like to adjust volume, but with a capacitor they can also be used as a tone control.
