Perfect in every way
I've been using a 24cm version of this pan for a month now. I also have a proline 28cm 7 ply frying pan from Demeyere. I can't fault either of them. I didn't know how deficient my old pans were until I started using these. Fried chicken is more tender when prepared in the Proline than in my old copper pan, full stop. The meat simply tastes better, I'm not joking. Chopped vegetables come out browned and perfectly cooked from the Atlantis despite filling 2 thirds of its volume and undergoing lots of stirring. I put this down to very high temperature that the pan can store and exchange with the food load. It's almost like a wok. Atlantis is also quite responsive which I didn't expect. Distribution of heat is superb on both pans. On Atlantis that is more obvious due to the straight angle of its walls. Mince fond on the 24cm surface of the pan is wall to wall, literally, on the small gas burner turned mid to high. The smallest gas output on the small burner will induce bubbles over the entire surface of a simmering sauce which I find quite impressive. This, and the proline FP, are the only pieces of cookware known to me that I could say are properly 'engineered' as opposed to just 'made'. They are easily cleaned with plastic non-scratch scourers.

I have used this cookware for over 40years.I still have the first pieces I purchased then and I still use them. I can highly recommend the cookware.

The best part about this entire line of pans is that they don't have that annoying rivet that food gets caked around on the inside of the pan, this line is completely smooth welded. This pan cooks better than any pan that I have ever used. It is a little heavy for a stainless steel pan but far less heavy than the cast iron I've used before. I can use this thing for almost any kind of sautรฉ and braising is really simple in it, I love how I can switch from stovetop to oven instantly since it is so versatile. The size is great for that smaller dish that you want to cook since sometimes I'm not feeding the whole neighborhood. Each time it gets cleaned it looks brand new again.

This is a very solidly constructed high quality pan. The only reason I subtracted a star is because I cannot lift it with one hand and it is very award and difficult to tip it sideways and pour anything out. It heats up evenly and quickly. The first time I used it it got so hot on a medium low setting the oil burned and stained the pan. I thought it was ruined, but when I de glazed it with water it came off over time. I think this might have been from the finishing process they use, and after the first couple of times this is no longer a problem. With my electric stove I almost never cook anything higher then 2 of 10. The pan gets very hot and doesn't cool off quickly. I think this pan would be perfect for a male professional chef, but I have adapted to the challenges and really like using it daily. Definitely recommend this pan.

These are heavy! But they are also stable with excellent heat conduction. The Silvinox does work pretty well also even though they are not as stick-free as the old non-stick pans (with PFOAs and PTFEs).

I love this pan. I love this cookware. However, it was obvious that this had been returned as there were scratches on the outside of the pan and the labels had been torn off the original item box.
