I can get any of the legs to fold down.

The legs fold down when you push on the small plate holding the them locked in place. If you push on the small tab it releases the leg to slide down in storage position. I found it easier to push on both at the same time and the will release and slide down flat.

We will be playing this in red mountain dirt. Is the table top fairly dirt and stain resistant?

This is a pretty hefty and sturdy set, The red dirt should grab some simple green or a good hosing down I would assume . Definitely worth the price .
