This Microplane Lives In A Restaurant
I purchased this grater last year to use in the restaurant I work in and it has been fantastic for zesting. Like all zesting, pressure seems to be the key. I like a light touch with a small rotation of the citrus so I get maximum yield on each stroke. The sharp, raspy teeth do the work.As for reports of bending it using hard cheese like Parmesan: Please understand at one point I was grating Parmesan five days a week on mine in a restaurant to make Caesar Dressing; so it was being used WAY more that at home and very aggressively. As the teeth dulled over months I found I needed to exert more pressure to grate. Eventually the plane started to flatten and after about nine (9) months part of the tack-weld between the plane and the frame gave out. It still grates but not as easily. The wide face is a huge plus in grating and I can maw thru cheese quickly. I don't like grating cheese on a narrow plane; I end up nicking myself more trying to aim it center of the plane and on large pieces the plane is prone to shaving grooves in the cheese. This plane gives me a smooth, uniform face as I grate.The little rubber around the foot of the plane will give out over time and in the restaurant I ended up just removing it to prevent anything from coming off and going into the food. It does improve traction but the grater works just fine without it when I angle and set it on the board or table.All that said, for the use and abuse I put it thru I would happily buy a replacement. Nothing lasts forever and it really does the job for me.* * *As an aside: nothing lasts forever. I once saw a coworkers trusted classic microplane (the kind with the plastic handle) snap mid-stroke during work and half of it went flying across the kitchen! He was left holding a handle with the stump of a microplane sticking from it. It simply fatigued in the metal and gave up the ghost! Nothing lasts forever and the commercial kitchen really puts things to the test.

turns parmesan into fluffy ribbons
simply using this grater to break down my parmegiano regianno (sp?) truly transformed a meal i've been making and eating the same way, with the same cheese, for years. so now, rather than the clumsy chunks and grains yahoo get when using the 'star' side of a common box-grater, you get a puffy cloud of cheese shredded so fine & thin that it seems to have an astonishingly and disproportionately positive effect on the final outcome of whatever you're adding it to.Similarly, when used as a zester (which I have not yet tried), I assume you'll get superior distribution of much finer gratings so as to create a more evenly distributed and intensely flavored dish...and I'm sure the same goes for spices.Hand-washing this grater is so easy vs typical graters - you can actually get it completely clean, as the nooks and grooves are far less pronounced..so long as you don't run your sponge against the blades so as to end up with grated sponge.And I have to agree with other reviews that comment about how much easier it is (must be) to use this on hard cheeses (vs the original, narrow, plastic-handled microplanes) due to its wider blade plane. And then there's the all-steel-construction, using no plastic handle that seems prone to cracking/breaking, according to reviews on those products.Afterthoughts: the rubber slip-resistant "foot" and the dual-purpose safety guard that doubles as spice gratings catch are thoughtful inclusions that put this product that much further above the alternatives.Couldn't be happier!

The Greatest Grater
Ok, I admit it. I'm a kitchen gadget connoisseur. The Microplane Professional Series might be a little pricey but they are worth every extra dime. I have three different graters from this series and I love them all. I use them a few times a week. I got my first one over ten years ago and it still grates and looks like it did the first time I used it. I cannot say enough positive things about these graters.The hard plastic cover that comes with it is easy to use and perfect keeping it safe while stored in your drawer. To remove the cover, simply pull it towards the handle. To replace it do the reverse motion.Warning: These graters are very sharp so keep your precious fingers and knuckles away from the blades!I wash mine by hand using a plastic bristle brush immediately after use. Easy to clean with just a few quick scrubs and a good rinse.Conclusion: Spend the extra money and buy this grater. You will not regret it!

Indispensable tool in the kitchen
I have owned a previous Microplane, consumer edition, with plastic frame and it was absolutely wonderful until it wasn't. The plastic frame lasted a good long time, being hand washed but once it broke the grater was useless. When I saw the Professional series I knew I needed another one. I first bought the skinny 'rasp style' and it is good for zesting citrus fruit, however, I lost several garlic cloves in a pot and had to fish them out because the surface area is not wide enough. This is the main task for which I selected the tool. I does a better job than a press and is infinitely easier to clean. It also makes a good ginger grater.Upon receiving this Microplane the quality and professional sturdiness stood out immediately. The thoughtful additions of non slip base and a tighter cover made my day. This is reminiscent of chef tools I am familiar with in restaurants. I have no doubts about it longevity and usefulness.If fine grating is what you need this would be my first choice.

Fantastic- and no sticker problems
The grater works well and seems well made. I was concerned about the problems people mentioned with the sticker leaving adhesive, but it was not an issue for me. The sticker was on the back and made of plastic. When I slowly and carefully peeled it off, it left almost no residue behind. The couple flecks it left behind were less than 5% of the total area of the sticker, and came off in about a minute when scrubbed.The grater itself isn't just spot welded at the corners, it is completely welded up both sides where the grating surface comes into contact with the wire frame. There is some flex when grating Parmesan, but it seems fairly sturdy. The grater makes very fluffy, fine piles of Parmesan that melt instantly. This is great if you want to have your cheese melt, but if you want heartier strips you would need a different size. This greater doesn't work as well on medium to soft cheeses like cheddar as they tend to crumble when pushed through the small holes.After a month, I'm still happy I bought it. I can't say how well it holds up over time, but it seems very well made.

This would be a 5* rating, except for the labels! I had previously ordered their coarse grater and the ribbon grater, and just loved them, so this time around I ordered the fine, the extra coarse and the shaver. When I tried to remove the labels (there's one on the underside of the grater itself which covers most of the grating holes, and one on the plastic cover, about the same size), it all came back to me. There are different grades of adhesive a manufacturer can have applied to the labels, ranging from easily removed, such as you might put on anything meant to come in contact with food, all the way to 'extremely difficult to remove' such as you might put on an item that is easily shoplifted or something the manufacturer doesn't intend to be removed at all, for example, the packaging which will be discarded. For some bizarre reason, this manufacturer chose the strongest rather than the easily removed. I had to soak it for 24 hours, then scratch off bit by tiny bit with my fingernails (removes without scratching the surface), then sop down with Goo-Gone to get rid of the adhesive, then soak it again in hot, really soapy water to get rid of the Goo-Gone and the final residue of adhesive. So basically, you can't just take this out of the box, wash it off then use it for dinner. You've taken on a "project" to get it ready to use, plus the expense of the Goo-Gone. (Other users have suggested olive oil, but to me, the Goo-Gone is enough better than olive oil to make it worth the cost.) Once you get over the initial irritation of "What in the world were they thinking?" about the labels, these are really fabulous graters.

Really nice and worth every cent
The grater is sharp, easy to hold and quality; made of stainless steel from top of the handle down to the grater base. The only plastic is the sliding cover. Probably the best little grater I’ve ever had and plan to buy other sizes from this series. Made in the USA and not China is another huge advantage.Other reviewers talked about the labels and glue. Because I had read reviews before buying, when mine arrived I simply started pulling at the label corner, carefully and slowly pulling the label back. The label peeled off in one piece taking all the glue with it. No residue left on the grater at all. Not sure why others had an issue with this?

Best at what it does
I'm old enough to remember graters before the Microplane came along. It completely took over because there is nothing nearly as good as far as I know. I own and use several; this is the finest. Perfect for fine citrus zesting, garlic when you want a paste and not chunks. Once you grate a nutmeg you will NEVER use the bottled, powdered stuff again.True story: The microplane was invented for wood working and someone - I think the inventor's wife - used it for cooking and soon the demand took off. The inventor resisted for quite awhile because, well, it wasn't wood working. Eventually he saw the error of his ways and the rest is cooking history.

We had another grater and wanted to change it for a long time. So glad we finally did! This grater is excellent and the fact that it’s all metal makes it extremely durable and dishwasher safe. Love it!

Pratique et *très* efficace
Comme tous les passionnés de cuisine, j'avais entendu parler des rapes Microplane. Essentiellement le modèle classique, qui ressemble à un outil de menuisier (que j'ai acheté également, et que je commenterai sans doute prochainement).Celui-ci ressemble plus à un ustensile de cuisine. La lame est nettement plus large. Du coup, je le trouve plus pratique que le classique pour le parmesan ou le pamplemousse. Plus facile à laver, aussi. Ca compte.Mais c'est surtout une question de goût personnel, car la lame a des découpes identiques à celles du modèle classique.Cette Microplane permet de zester et de râper très fin avec une facilité et un résultat vraiment bluffants. Le parmesan se transforme en une sorte de neige très légère, qui fond instantanément au contact des aliments chauds, et qui se mélange parfaitement dans les préparations froides (appareil à cake, farce, etc). Les zestes sont également très fins : la microplane ne prend que le zeste, pas la partie blanche (amère) qui est en dessous. Par-fait !Les noix de muscade ou les fèves tonka ne lui font pas peur non plus. pas besoin d'appuyer fort pour que ça râpe.Il faut quand même faire attention aux doigts. Si on dérape, je suppose que la lame zestera aussi bien un pouce qu'un citron ;-)La lame a tendance à fléchir un peu quand on appuie. Mais elle revient en place dès qu'on soulage un peu. L'acier a l'air d'avoir un bon ressort. Les soudures sont impeccables. La durée de vie de ce modèle devrait être très bonne (si la lame ne s'use pas, mais c'est un peu tôt pour le savoir).UPDATE (7/09/2014) : 19 mois plus tard, je confirme tous les points de mon commentaire. Elle râpe toujours aussi bien, alors que je m'en sers presque tous les jours pour tous types d'aliments y compris la noix de muscade qui est assez dure. Rien n'a bougé : elle est comme neuve.Décidément, un très bon investissement.UPDATE (14/02/2018) : Cela fait presque 5 ans que j'utilise cette râpe quasiment tous les jours. Et elle fonctionne toujours aussi bien. C'est réellement un très bon investissement.J'ai complété ma gamme depuis. J'ai les modèles à grain fin, moyen et gros (extra coarse) et celui à lames ruban. Tous dans cette même forme, large avec manche inox. Tous excellents, avec leur usage propre, en fonction de la matière à râper et du résultat souhaité..

Ne ho provate di molti tipi diversi, elettriche e non, ma devo ammettere che questo articolo è nettamente più funzionale e comodo: grattugia con grande facilità, con uno sforzo decisamente ridotto e in poco tempo anche quantità "importanti", si lava in un attimo, non ha batterie o accumulatori che sul più bello non ce la fanno, non ha parti meccaniche che si logorano.La manutenzione si riduce a lavarlo con cura in acqua FREDDA, se necessario con un po' di detersivo, MAI in lavapiatti.Molti non lo sanno, ma coltelli, e tutti gli oggetti affilati o da taglio, non vanno mai immersi o lavati in acqua calda e tantomeno messi in lavapiatti: il riscaldamento produce infatti dilatazioni termiche che alla lunga rovinano l'affilatura.Dopo averla provata per qualche giorno, ne ho comprata una seconda a grana più grossa e ho rottamato due grattugie elettriche!!!
