Do these come with the wiring for installation?

Yes but, depending on your installation (location on vehicle, wiring path, etc.) you may need additional wire and/or connectors. I installed on Jeep Grand Cherokee, needed a few feet of extra wire (22g) and a couple of sealed connectors in order to install on/off switch inside vehicle.

what vehicles are the harnesses compatible with so they are a direct plug in?

They should work for any vehicle. The harness hooks up to the battery and has its own switch included. You just have to install the switch somewhere in/on the dash.
