Top of the heap
In the mass-production market, Misono makes phenomenal knives and doesn't get as much attention in the west as in other parts of the world, at least not in the consumer market. The UX10 Chef's knife has been a staple in working kitchens for decades. I've used a variety of paring knives from Victorinox, Shun, Mercer, Wusthof, and Henckles over the years and this is at the top. The Molybdenum steel has been great for me; easy to sharpen or touch up between sharpenings, no staining, and not so soft it'll roll the edge on harder products. I love that it is full-tang and looks classy; a little mineral oil on the handle keeps it from fading. I have large men's hands, and the handle is actually perfect for me. It feels like holding a carving or whittling blade, which is exactly what I want. For a paring knife, I prefer the French/western style handle to the Japanese Octagonal or D-shaped handle utilized by Shun, which would be my second choice. Shun's blades are extremely fine and I feel their steel is a bit soft for how steep the grind is, but when used properly they are every bit as capable as a custom blade. For the price, I suggest trying a few of these and finding which fits you best. Or, get the Misono and never look back!

Molybdenum is the key
Ordered 2 by mistake- however, this size & its quality & appearance also are impressive Steak Knives & will be back for more. Stainless steel knives are worthless. They may cut well for 2 days- despite appropriate care, they rust within a week. Iโm not a materials engineer, but a friend gave me a set of Japanese Molybdenum knives (@ the time, an โoddโ gift.) They came with a ceramic rod sharpener - a MUST HAVE!!!) & said Iโd have them for a lifetimeโฆ another โoddโ statement. He was 1000% correct. Iโve had those knives for 4 decades & they are fabulousโฆ However, I needed a set of knives for a 2nd home. Misono gets 5-stars for its blade, balance, functionality & appearance. The sleek black handles are elegant- even for a formal dinner. Took me awhile to find Misono on Amazon site. But looking forward to adding to my collection: Misono knives are โcollectibleโ. ๐AMAZON My only suggestion: for customers who cannot read Japanese, please add a slip of paper in English so weโll know how to care for the knives- they are โinvestmentโ grade.

This knife is awesome!
This is a wonderful knife. It feels perfect in my hand. It is ridiculously sharp. Control with it is very easy. I love this knife! It came in perfect shape. I will be checking out other offerings from Misono. Edit: I bought a second one because I like it so much.

beautifully made paring knife
This was purchased to go with a Misono chef's knife. It will replace a bunch of inferior small knives that are never quite sharp and never quite right for the task!

Wish I found this brand before I bought my other knives.
This the real deal, made in Japan they are the sharpest knives I have ever used and I have the cuts to prove it.

Sharp and well-made
I had bought some Cuisinart paring knives on Amazon at Thanksgiving, but they weren't very sharp. I asked the professional who sharpens my knives what off-the-shelf brand he prefers. He recommended Misono. This knife is much sharper. It's smaller than the Cuisinart C77TR-3PR, but I'll still easy to use.
