Q: Can I use this instead of actual cocoa powder to give a chocolate flavor to a protein shake?

I wouldn't, I used this to put in my homemade Kahlua recipe. It is superb in Kahlua. You might check directly with the company who makes it. Good luck and be safe.

Some when the bottle is open but not so much when added to coffee, etc

Q: I was looking to mix this flavoring with sugar. Would this work for my applications? Would it evaporate?

Haven't tried it but if you kept it tightly covered it may work. I'd be more concerned about clumping than evaporation since it's a liquid.
