The bitter the better
Olive oils that are higher in polyphenols tend to be harsher, bitter, and stronger flavored from The Healing Powers of Olive Oil

I recieved this, and it was manufactured in 2023, and it's rancid.
Horrible! I opened it right away, and was excited to taste what is supposedly REAL olive oil. It was so rancid, it burned my throat with just a little taste. It still hurt 20 minutes later... it was manufactured in 2023, and my order was made Oct. 30 2024. No wonder, good olive oil should be fresh. Horrible. Amazon was kind enough to give me a refund, but canceling my subscription I just made. Ugh!

Cost effective for its' class, super fresh olive oil. Simply amazing.
This is an amazing olive oil. This isn't like what you get out of a grocery store, that may taste good enough, nor is it the cost of what you see in the same location but that is because it is not on the same level. This is an amazing quality olive oil with a strong leafy taste and peppery burn. It carries so much flavor I was immediately shocked.I will be honest, I felt like I was shooting in the dark when I chose this to review. There is a lot of misdirection on Amazon as of late, with many products claiming things that aren't true or only partially true. This thing happens elsewhere, like at stores and the like but it is harder to find good products like this. When getting a olive oil, locally or online, often it has been sitting around a while and I have heard of cases where it is mixed with other oils, this is often why you get a muted flavor profile on lower quality olive oils. That is not the case here. It is straight about when it was pressed and it is even certified. It has a shelf life of roughly 2 years, but you don't really want to sit on it as like with grocery olive oils you will taste the flavor slowly fade away. Use this amazing oil when you get it is my advice. When it comes to using this oil, it is thicker than my grocery variant but that is not a bad thing. You can cook with it, but normal olive oil temp rules apply. It will impart its' flavor very well.Side notes though, I love how they have tasting instructions for this olive oil. I already knew how to test, but that was awesome. Also, it is ok to have something amazing like this olive oil but still get a grocer olive oil but I advise that you use this amazing oil instead of waiting on using it for that maybe rare special time as it would be a waste to not experience this. I mostly cook with oils like this, but it is amazing on salads requiring oils. And last note, the company is real, and they also make wine and the olive trees are around the vineyard but I actually had to look that up.

Pretty good..
Fattoria Bini's Robust Olive Oil (I purchased the one in the glass bottle) has a nice test and is great for dipping. However, the price is a bit nuts. While the product is good, you are paying for the pretentious story/marketing and packaging. Cut the price in half and I'd be happy to buy again.

Fattoria Biri Tuscany Early Harvest Extra Virgin Olive Oil 16.9 oz
A product of Italy this extra virgin olive oil is incredibly delicious. This is an early harvest oil so the complex buttery flavor has fresh grassy, peppery notes with a light bitter element at the finish. A special olive oil it is perfect to drizzle over cooked fish, roasted vegetables, creamy soups, pasta and pizza--and it makes a first rate bread dipping sauce with just a small amount of fresh ground black pepper and salt.Although it may be used for cooking I will limit use as a finishing element for a dish where the oil’s flavor can stand out and be thoroughly enjoyed. In addition to its delectable taste it is polyphenol rich so it is high in antioxidants. I appreciate the built-in spout in the bottle neck which provides some precision when pouring to avoid waste. The bottle arrives well cushioned in its own sturdy carton and the glass is dark which helps keep damaging light from the oil so it remains fresh as long as possible. To estimate shelf-life at the time of this review in February 2025 the Best if Used By date is 23 months in the future but dates will vary. Excellent.

Very good, see tasting note
Nice dark slim bottle, twist cap with a regulator inserted into the opening. It will provide a thin stream and you can serve it like a wine, twisting the bottle as you lift it up so as not to lose a drop. Because losing a drop you do not want.Very fragrant. Fresh, ripe grassy base and a bit of fruit, sweet-bitter profile, buttery mouthfeel, with a spicy polyphenol finish. I had dipped bread slices into it. Best way to use it is where it can shine. You do not cook with this, you do not subject it to heat. Drizzle it over things to finish with—fish, steak, pasta.Label says it's a 2023 harvest, best by 2026.

Bitter, Grassy, and Exceptionally Complex - Excellent Quality Olive Oil
The Fattoria Bini Polyphenol Rich Olive Oil is a very high-quality olive oil to use in your favorite recipes. For the uninitiated, high-quality olive oil has a very complex flavor - it's rich, grassy, slightly bitter, and surprisingly peppery. The closest thing I can say it tastes like is nasturtium leaves, which are very peppery and flavorful. I was initially baffled at how to use this oil, but it worked beautifully in cooked recipes such as roasted chicken, focaccia, and stir-frying applications. It also works well in salad dressings or as a finishing oil for boldly flavored dishes, though I found it too strongly flavored to use solo as a bread dipping oil or on milder dishes. Having been raised on lesser-quality olive oils, this is definitely something that will take some getting used to, but if you get the opportunity to try it, high-quality olive oil is not only much richer in flavor, but the health benefits are fantastic. Overall, this is an excellent quality olive oil that's worth considering.

Excellent, rich tasting olive oil
I find this to be very delicious but other folks have complained that it tastes very "bitter." Adding a little salt I think counter-balanced that complaint, especially for the purposes of dipping or using as a salad dressing. I would buy this again, though my wife says that she will not and would relegate it exclusively for cooking. Which I thought was a little harsh.
