Great alternative for diabetics!
My husband grew up having rice most days of his life, but can't indulge since we were both diagnosed with diabetes several years ago. I purchased both this as well as another brand to try, and Better Than Rice was the best of the two by far, coming closer to the look and texture of the real thing. Admittedly, it does smell odd upon opening the package, but following the directions by draining, rinsing, and then boiling the product for a few minutes honestly does eliminate that odor completely. Being plant-based, the texture is just a bit different than regular rice, but when mixed with curries, soups, etc., you can hardly tell. The fact that it's high in very low-carb fiber makes it have a minimal impact on blood sugar spikes. High fiber diets also have the benefit of lowering cholesterol and glucose absorption, making this product actually healthy to eat. I did have to buy a mesh strainer because, like normal rice, the 'grains' are small enough that I was losing some down the drain using typical colanders and strainers. I resorted to using a splatter screen temporarily, but that was too flat and some of the product kept washing over the edge while rinsing. Ordering a new, inexpensive mesh one was a small price to pay.The steps that I've found to work best are:1. Rinse using a mesh strainer for 15+ seconds (the pieces are small and will wash out of a regular colander)2. Place into boiling water for 2+ minutes. (You can't really overcook this, so allow the water to return to a boil and then leave it for a few minutes without worry)3. Strain well, then place back into the original pot over medium heat. Stir frequently for 1-2 minutes to eliminate the excess water that's absorbed by the grains. This, again, isn't something that's time sensitive, so just use your personal preference. I simply find that this last step helps make the final dish less soggy, resulting in something more closely resembling regular rice.I've also tried the Better Than Pasta/Noodles versions and we actually had homemade spaghetti sauce last week for the first time in years. The pasta-like products would be great for people who like theirs al dente, as it's just a bit firmer than I'm used to. It was great to enjoy spaghetti again, though, especially while knowing that you weren't 'cheating' at all. I'm hoping that the price will come down gradually because we're enjoying this line of products and could purchase them more frequently if it were less costly.

Great if you enjoy feeling nauseous and strategically planning for emergency stomach distress
This is my first review. All of my other hundreds of Amazon purchases, even those with faulty design and the products that fell apart shortly after purchasing, were not enough to prompt me to write a review. However, I could not keep silent about these noodles. 24 hours ago I was filled with excitement at finding a noodle replacement that didn't involve spiralizing vegetables. As many have noted the package has a terrible smell when you first open it. This was quickly alleviated by running the noodles under water. We prepared the noodles and added a mushroom sauce. As we ate we gushed about how excited we were to find these noodles and discussed plans to try to the rice version to get a break from cauliflower rice. All was well.Until 6:00 this morning when I woke up with stomach cramps and severe nausea. I made it to the restroom and had a few moments where I thought I would see the once glorified noodles again. The initial severe nausea has passed and now I have intermittent nausea and a headache and my husband has similar symptoms. I'm super thirsty but can't drink much because it makes me feel sick. My husband and I have one bathroom in our apartment, so we're strategically trying to plan in case some of the other side effects (DIARRHEA) start to happen to both of us. We still need to flip a coin to see who will get the trashcan. I would recommend looking at possible side effects and warnings before consuming these miracle noodles. We may have eaten too much for our first time trying them, so that could be the cause of the reaction, however, we're not going to eat any of the other packets to find out if we'd have better results with a smaller amount. I started Googling these noodles and found some other similar reviews that I somehow missed when I was ordering these, so at the very least do some research before purchasing, and if you do decide to try them good luck and have some trashcans ready if your people to toilet ratio is unbalanced in your household. As for us we're going to stick with zoodles and cauliflower rice in the future.

Pro's and Con's, would buy again
These are amazing in terms of calorie intake. I just started keto and I wondered what I was going to do with my pasta obsession so... decided to try these.I don't know a lot of asian recipes but I know italian recipes so this is what I did:Opened the package. Put them on a strainer under water and moved them around to rinse them. The smell is kind of nasty but once you rinse them the smell is gone. Put them in a hot pan with a bit of olive oil and sprinkled some salt and black pepper on top and moved them around with a spatula to get rid of any liquid. Then used a low carb alfredo sauce with mushrooms and cooked and chopped some bacon on the side. Topped them off with Parmesan cheese. BAM!The texture takes a bit to get used since it feels rubbery but they don't really taste like anything once you cook them with other stuff. All I could taste was bacon, Alfredo sauce, and Parmesan cheese. I found it one of the most satisfying meals I've had since I started keto. I must admit I did get some intestinal cramps later that day but I am not used to having a very high in fiber diet. It is the same type of cramps I've had when eating things high in fiber, like almond meal for example. Also, I should say I ate a whole bag in one sitting so managing your intake on these might make a difference. My bowel movements that night were fantastic though, so there's that. You might want to take it slow with these when you first get them. I've seen a lot of people comment that they made them ill - you might just not have the stomach for it.All in all, I will continue to eat these in moderation and perhaps a bit more once I get used to a high fiber content without the cramps. Their nutritional value is amazing for how satisfying they are.I saw there is a "Better than pasta" brand but I have not tried it. If anyone care to commend I'd love to see a comparison.
