Quality cookware
This behaves pretty much like other high-quality SS-clad aluminum pans. It heats up fairly quickly, cooks evenly, and the handle stays cool.It cleans easily if you deglaze properly. I've seen complaints about discoloration, but this is easily avoided by not overheating. Minor discoloration can be removed by cleaning with a light spray of 50% strength white vinegar.

Best pan ever
I love this brand and so do the other cooks in my family. This stainless is easy to clean (I don't put it in the dishwasher - it cleans easily with some dish soap and a nylon scrubber) Sometimes I'll soak it if things are crusted on and it cleans right up. Cooks evenly - perfect!

Cooking a much lower heat--Beautiful
Never had a stainless frying pan. The Le Creuset is marvelous. Easy cleaning and such even heat across the pan--terrific. Cooking at half or less than the heat required on our other pans--love it!

Scratches on the bottom of new pan.
The pan works really well however, seems like I got a used pan. So many scratches on the outer side of the supposedly brand new pan.

I love this pan for chicken and steak
Firstly, this is Not an all-purpose toss it in the dishwasher Teflon pan. Using it requires a different technique. I use non-stick pans for omelettes but stainless or cast iron is the only thing for pan fried chicken, steak, or pork chops. Sear each side then finish in a hot oven. With very even heating, no hot spots, it is perfect for making a sauce after the meat is removed. The pan evenly distributes heat and does not deform when hot. It's a truly professional grade tool and priced accordingly.Clean thoroughly with Barkeeper's Friend, avoid the dishwasher. Treat it well and this pan will last for generations.
