Review: Still Works 11 Years Later - I bought this bread machine in October, 2010. I used it A LOT over that time. Last year I gave it to my kids because I went keto / low carb and thought I’d never use it again. Just bought a used one that was made in 2009. Same exact model as this one. Works beautifully. The pictures are of yeasted keto breads I recently made with that one. I’ve been using the light crust, Wheat setting for these keto breads. First, read and follow the directions. Anyone reading a bad review of this product should question whether the reviewer read the manual and followed all directions on the use of the machine. Then, whether he/she properly measured all ingredients and put them in the exact order shown in the recipe. (It’s best to weigh ingredients—especially for low carb or gluten free breads.) Not getting high and mighty on you -- 'cause I didn't fully read the directions. Remember to:. 1) Make a depression in the dry ingredients and pour the yeast into the hole. 2) Only put in the amount of add-ins specified in the recipe. For my first loaf, which is now over a decade ago, I added a bunch of raisins and pecans when the machine beeped to indicate it was time to do this. I didn't measure them. I woke up to a hard, lop-sided loaf. Operator error! I admit it. :-) I'm one of those "a pinch here, a pinch there" cooks who likes to wing it and experiment. But for now, I follow the directions EXACTLY. And, the loaf comes out the way it's supposed to. What's worth the money on this machine is the loaf pan shape and 2 paddles that make a normal shaped loaf that's easy to slice. That said, it can be challenging to release the bread from the pan because of the paddles. Tip from the manufacturer: Turn the bread pan on its side and turn the wing nuts a quarter turn. Then try again. Another tip: Only use a rubber or silicone spatula to loosen the bread, if needed. That’s a special nonstick coating that you don’t want to scratch up. Another lesson: Make sure the paddles are pushed down completely (they should click into position). I neglected to do this on one paddle and it didn't mix the ingredients prior to the rise cycle. Rather than log into desertcart and post a scathing review of the product, I recognized that it was, again, operator error. Mixed it by hand in the pan then took the dough out and finished it by hand (ultimately baked in the oven not the bread maker). Finally, be sure to grasp the pan and tilt it toward you before pulling it up. The directions tell you to do this, but I didn't fully read them before trying to pull the pan straight up. A great bread maker, totally worth the extra dough. :-) (I can hear y'all moaning at that pun...)
Review: Best kneading, light top crust, GREAT BREAD! - THOROUGHLY RESEARCHED BREADMAKERS BEFORE I TOOK THE LEAP I have been using this Zoji daily for a month and am very pleased. I have 4 decades of home bread baking experience and have tired of the kneading process, although I still love shaping loaves and rolls and pizza crusts. Before I made this purchase, I researched breadmakers and bread machines everywhere I could--in books, on websites about breadmaking and flours, at desertcart (where the reviews are always the most enlightening), at retailers online, and in brick & mortar stores. Analysis of the qualities of this Zoji led me to make this purchase and I was lucky enough to make my decision when the price was as right as it was going to get. Quite obviously, the Zoji isn't cheap, but it is a great value. And value matters more to me in the long run. QUALITIES THAT SOLD ME: HORIZONTAL BREAD PAN, 2 KNEADING PADDLES, GREAT TEMPERATURE CONTROL The main qualities of this Zoji that finally convinced me were the longer, more horizontal bread pan, the two kneading paddles, and the detail about temperatures and times for each phase of the Zoji process (these are available in the Zoji manual on their website). I have to admit I was also influenced by the King Arthur Flour blog and several related posts I ran across (google "king arthur flour zojirushi test kitchen" for some fascinating observations). What you get with the Zoji is a machine designed by people who know what they're doing in terms of gluten development, temperature control, and rising times. VERSATILE MACHINE TAKES THE PROCESS TO COMPLETION WITH FLYING COLORS The Zoji is perfect for me. The two kneading paddles thoroughly develop the gluten and work the dough into a smooth, even textured ball so that I may shape the rolls or loaves myself. Or I can let the machine do ALL the work. I don't know how Zoji has managed it but the loaf is beautifully shaped by the machine just before the final rise. I often open the lid at that point and sneak in with a knife to make some slashes across the top of the loaf to give the bread a more handmade look, but I don't have to do this. The Zoji, unlike any breadmaker I've tried before, is perfectly capable of taking the breadmaking process from start to finish all by itself while still turning out an exquisite product. It is a tremendous time-saver. You really can set it and forget it. BETTER FLAVOR DEVELOPMENT THAN HANDMADE! The thorough kneading and three rises that the Zoji gives the dough make the flavor of the finished bread richer and more complex. The controlled temperatures at each phase of the breadmaking process lead to a beautifully-textured loaf. The recipes that are included are wonderful. But I have to admit that I prefer to use my own combinations of kefir, eggs, less salt, whole wheat flour, and yeast. The Zoji still gives great results even though I don't measure my ingredients. EASY TO CLEAN Before each use, I pour a bit of canola or olive oil on the posts where the two paddles will be inserted. Then I place the paddles on the posts and pour in a bit more oil. I am careful to keep the amount of oil to a minimum so that the bread does not get oily. I then reduce the fat in the recipe by the amount I used to pre-oil the paddles and posts. By doing this step first before I add any other ingredients to the bread pan, I find that the loaf slips effortlessly from the pan, the paddles slip easily off their posts, and nothing requires washing. A quick wipe with a moist cloth is all that is required for clean-up. When I made bread by hand, there was a lot more washing to do at the end. Now instead of washing dishes, I get to sit down and enjoy a slice of hot, crusty, steamy bread. Delicious and easy! CLEAN, UNOBTRUSIVE APPEARANCE ON THE COUNTER The Zoji is also a very good-looking countertop kitchen appliance. Since I use mine so often, I never put it away. The fact that the breadmaker is so handsome is just one more quality in its favor. ONE IMPERFECTION: THE TOP CRUST DOES NOT BROWN ENOUGH ON ANY SETTING My only complaint is that the top crust does not brown as nicely as I'd prefer. But this is a minor problem. The bread tastes GREAT. The top crust is acceptable although not perfect and could be corrected with a few moments under a broiler. The flavor and texture of the bread are just outstanding. FIVE STARS ANYWAY! I would like to have given 5 stars, but I think the Zoji designers really ought to be motivated to tweak their awesome bread machine so that it is absolutely perfect. Aw what the heck, the Zoji is so great, I'm giving it 5 stars anyway!!!

## Questions & Answers

**Q: What do you estimate it costs you to make a load of bread in this thing?**
A: The most accurate answer would be that it depends on the cost of ingredients and utilities and labor. You may wish to use organic ingredients and that will increase the cost. Basic store-bought ingredients will cost less. Buying in bulk will reduce costs, too. Then, it depends on the cost of your power (electricity) and water. The cost of utilities will factor in. My best estimate so far is that the cost of a loaf would be very close to the cost of a loaf you would make by hand, plus the cost of any utilities not used in handmade bread (e.g., the kneading and warming; with the baking costs being similar since both machine and handmade baking will be similar). The next obvious factor will be to decide on what recipe to compare. This being said -- I made the whole wheat nut bread recipe given in the included instructions for about $2.40. That's a 2 lb loaf with walnuts, organically raised stone ground whole wheat flour, organic sugar, pre-measured packet of yeast, above average cost of dry milk, above average cost of nut pieces, and ignoring cost of: salt, water, and electricity. Depending on what you think your time is worth, it saves about 0.75 hour of labor using the machine, over manually making the bread. There is a value in how the machine consistently prepares the bread, whereas a manual method often introduces variables of rising/kneading times and rising temperatures. Since the ingredients I chose are high-end, any other loaf would likely cost less. If you're trying to compare this with store-bought 'shelf bread' then keep in mind this method can make bread without preservatives, additives, or any 'unknown' chemicals. What is that worth?

**Q: what is the diffeence between this model and the PAC 20**
A: Which model has the additional heater?

**Q: Can this make 1 or 11/2 lb bread.**
A: Yes

**Q: How good is this machine at sourdough bread recipes? Does "sourdough starer function" mean MAKING starter or USING starter you already have?**
A: It likely is for making the starter. Once you use it in a loaf , you are supposed to remove some of the dough and then use it in the next loaf, thereby creating g perpetual bread without buying yeast.

### ⭐⭐⭐⭐⭐ It's just that good.
*by M***R on June 21, 2011*

This is bread machine #5. The first was an old panasonic. It was loud but made okay bread. #2 was a Breadman Ultimate. I liked it, it made good bread and I loved the pause button. It allowed a cycle to be stopped in the middle and restart without issue. Pause is essential for the autolyze required in making hand-thrown loafs. I made all kinds of bread with it, all sorts of dough. But when it ran, it sounded like someone tossed a handful of nuts, bolts, and wrenches in the machine. I mean--it was LOUD. It also died after about 18 months. It just stopped working, period. After, I bought a new Breadman through amazon. It did not work and Amazon was great about the return. Then came a Cuisinart from Williams-Sonoma. THAT was a mistake! It turned 30 seconds and stopped. There was really something wrong with that machine. After all that, I finally caved and bought the Zojirushi. I avoided it for a few years because I thought it was 1) too expensive and 2) looking at the on-line manual, too complicated. OMG. The first time it ran I left at at preheat to go pick up my toddler from daycare. I came back as it was kneading. My first thought was Holy Cow is that thing q-u-i-e-t! My other half came downstairs and asked if it was actually running. No kidding, it is that quiet. With ambient noise from the AC and radio, I can barely hear it working. To make a long story short, it's worth every penny. The instructions (to program a pause) are not as complicated as I thought and it just works wonderfully. And it's so darn quiet! That alone is worth the price of admission. What's that phrase? "Cheap is cheap"? This isn't cheap but it is totally worth it. Build quality is great too. This machine does what it is supposed to do and it does it very, very well. July 14th 2011 Update: It's been over a month now and I've made several loaves including a brioche and light whole wheat. It's true you will have to fiddle with each recipe a little. I've needed to add more flour to all my "Best Bread Machine Cookbook" recipes and I note that the 1.5 lb loaves are better formed and cook more evenly so I am making those. You can also cut down on the sugar in your recipes to reduce the browning on the sides. Otherwise, the thing is still super quiet and it's doing a great job. Don't wait like I did--just buy one. The noise reduction alone is worth it. :-)
