Saving us time and money!
LOVE this cookbook! Some reviews comment their disappointment at frozen vegetables or can goods being used in the recipes but to be honest - I'm happy that it does! As a married couple on a budget, we are always striving to make our money and food stretch a little farther every week. I'm thrilled to know that I have many of the items in my cupboards right now to cook up something healthy, easy and delicious!

Such an awesome cookbook! Every time I make something out of this book my husband says it's the best vegan dish he's ever tasted. It's simple enough for everyday dishes but not too simple that it's boring. I've never been a person who likes to cook which is why I LOVE slow cooking. I put everything in the pot at noon and dinner is ready at 7 and I'm relaxing. I also love the budget friendly options. This book has changed the way I grocery shop! I buy frozen veggies, dry beans, spices, potatoes and boom 💥 dinners for days! Buy this book, you won't regret it.

Really worthwhile
The title doesn't lie! It's super easy and the recipes are affordable. I made the miso split pea soup and loved it. Can't wait to try other recipes. Another thing I'm into: All the recipes take less than 15 minutes of prep time; my type of cookbook!

Healthy, vegan, slow cooker, EASY....LOVE THIS BOOK
Slow cooker is a working vegan's best friend. Nice to have so many different options and super easy is an accurate description of the recipes. What could be better? Healthy, Vegan, Slow Cooker, EASY! Love this

Easy, delicious recipes
We are a one-vegetarian, four-person home. It's been hard to find slow cooker cookbooks with recipes we all like. I'm pleased to say that my slow-cooker adverse family has enjoyed everything I've made so far. Brussels Sprouts Curry was a big hit. Ratatouille was great. As a working mom trying to feed my kids healthy vegetarian dinners, I love the simplicity of the flavorful recipes.

Omg I love this book!!! I have a ton of plant-based vegan cookbooks but I had none for my slow cooker, easy recipes with ingredients that you probably already have on hand I can't wait to try everything in this book!!

Just What I've Been Wanting...er, Needing!
Veg for 26 years, and vegan on and off for many, that too often hasn't translated into healthy eating, mainly due to poor planning and lack of time. Over and over, I looked at my lonely crock-pots in the pantry, wondering if they might be the solution. But, not so hot at coming up with recipes on my own, all I could do was wonder, aside from making the occasional pot of chili.A fan of Toni's blog, I was excited when I heard the topic of her cookbook. And just as I'd hoped and expected, it's a straightforward presentation of practical but appetizing recipes. I've only had a chance to try two so far, but both came together quickly and did not disappoint. Even my kids were impressed, which was my goal. So, with a bunch of recipes dog-eared and ready to try, I know I'll be cooking my way through this book over and over, thankful for its getting us back on course!

Abridged version--but not advertised that way
Beware--this version doesn't have all of the recipes that the paperback version does. Don't buy it.

Really disappointed with this cook book
Really disappointed with this cook book... I've been trying to slowly bring in more veggie and vegan foods into my diet and really wanted to like this... but so far has left a lot to be desired.Yes the recipes are for the most part simple - prep ingredients (peel/chop), chuck everything in slow cooker, switch on - yep, seriously.But some of the guidance is odd, there's a recipe in the book where the blurb mentions chickpeas and the tips for the recipe suggests what to do with leftover brocolli; only neither of these ingredients feature in the recipe??Most of the recipes ask for frozen veg - why not use fresh? And there's recipes that talk of putting in cabbage with root veg and cooking for 8 hrs, well I can tell you that by doing this the cabbage will turn your dish bitter and go a grey colour, why? Because root veg & cabbage/sprouts etc have different slow cooker timings...! I know this because I tried the recipe and it was beyond disgusting and since found advice online that clarifies this.For UK buyers be aware that all measurements are US, cups & Oz. So you'll spend a fair amount of time deciphering amounts and there's quite a lot of 'branded' ingredients that I haven't been able to get my hands on in the UK.All in all, found this hugely disappointing - back to googling vegan slow cooker recipes instead.

Not so easy vegan cookbook!
Many of the simple recipes require you to have pre-made one of the previous simple recipes so I don't find them as quick and easy as the cover makes out! Many of the ingredients are American so difficult to get in the UK. I've used the book to get ideas but I haven't really made many of the recipes in full.

No cooking timings or pictures
A large majority of the recipes don’t include cooking times.There are also no pictures of the recipes , I think pictures in cookbooks are very important, as are timings.

Not Quite as Expected....
There are a number of lovely recipes but the cover is a little deceiving as many of the recipes are not actually for the slow cooker (salads or dishes to serve alongside slow cooker meals form a large part of the 100 recipes in the book); additionally many of the slow cooker recipes are the same but vary by just one ingredient or so (either added or taken away).A couple of odd recipes too such as the Moroccan dish requiring Udon noodles!Just one or two images throughout the book makes it hard to visualise how the meal should turn out but this isn’t the end of the world.
