Capons are, without doubt, the best poultry you’ll ever eat. We found one at our local grocery several years ago and have never looked back! The meat is much more tender than turkey or chicken and has delicate flavor notes not found in mass produced poultry. Most grocers can order you one, but if yours can’t this is a great solution. Minowa is a brand we’ve had before, and that’s what is waiting for tomorrow’s Thanksgiving feast. Cook it as you would any other poultry; to an internal thigh temperature of 175* with a 30min rest under foil after it comes out to complete cooking. YUM!!
