The closest thing to ancient Roman garum aka liqualmen
This product is awesome although a bit pricey. i got into the ancient Romans many years ago and all aspects of their lives, especially their wines wines and their cooking. i have a recipe for ancient 'panis quadratis' like the loaves found inPoompeiian bakeries that survived the eruption of August 14, 79 AD. Anyway the first time I tried this was a few years ago and was from Giustiamo..com and was called 'colatura di alici'. it's made on the Amalfi coast of Southern italy and has been made by the same family for many years. The Spanish version was a Christmas gift the year before last and I like the fact the bottle looks like a tiny amphora. A little goes a long way. it's great mixes with extra virgin olive oil, lemon juice and a few herbs for Caesar Salad when you don't have any anchovies, this is a great substitute. it adds umami flavor that's a bit hard to distinguish i've been looking to get some more of this and i'm glad Amazon carries it although it's a bit expensive considering the bottle's tiny, 100 ml.
