Yes they are removeable , nice quality too.

Q: At the stand's lowest setting, how high is the keyboard from the ground?

Without modifying the main support tube, ~27"

Q: I'd also like to know the right screw dimensions for putting wheels on it?

If you have the the gt track and have thier wheels on that, they will fit without an issue.

Q: What height are the keyboard and mouse at in the lowest setting? My hands are 2ft off the ground in my setup, I want to make sure it can go this low.

When the keyboard tray is horizontal and not tilted, close to 27 inches off the ground. The mouse tray not tilted, close to 25 inches off the ground.
