Straight from the packaging, this product is al dente, but the longer you rinse or heat, the softer it gets. While it is pretty taste neutral, there is a bit of the taste of the hearts of palm. If you're a fan of al dente and aren't turned off by the natural taste of the vegetable, give it a quick rinse, and have your chosen sauce already warm; then just a quick turn in the sauce over medium heat and you'll preserve that texture. If you don't mind softer textured pasta, heat a little longer and slower. I really like this product & hope you have good luck with it, too.

Q: are the pouches shipped in an acid water like the cans --or are they drained noodles?

They are shipped liked the cans, in an acid water to keep the product fresh and safe to consume.

Q: Since i dobt see it mentioned, i assume this product is not organic, correct?

The product is made from cultivated palm trees they harvest in a controlled environment. No mention of organic.
