A great next step as a culinary student
This is my first quarter as a culinary-baking student...my Culinary Techniques lecture class covers everything from stocks, broths, sauces eggs etc...unfortunately I am not starting cooking side of this class until next quarter...this book was a great next step for me to practice on family and friends. His sauces are creative and easy to follow.

High-end basics
Basics, tutored by a great master - and you just can tell the difference! This book is good for brushing up, managing a new essential or creating you own sauce variation. Clearly written, detailed enough, plenty of good pictures, A must in your library, if you are taking cooking seriously. Well, you have to be used to American measures and descriptions (like "white mushrooms").

Great sauces, easy to make!
This book is full of every type of sauce you could want to make. The index is handy because you can look up "chicken" or "pasta" and it will direct you to some great sauces to pair with it.

Inspired!
Michel Roux is without question a giant in his line of work, being a professional chef myself I found that his book "Sauces" is one of a kind , very well written, equally usefull to pros as well as amateur cooks. Word cannot describe the passion, skill and ispiration with which this book was written. A job well done!!

Finally!!
This book is a true masterpiece. Beautiful sauces explained in a manner that any level of cook can understand. The pictures are truly remarkable. This is my go to companion whenever I want to make a dish extra special.

I haven't had too much time to make these recipes, but what I did make turned out great. Everybody enjoyed them. like most things, you do need time and patience. I have Michel's other two boks; eggs, and pastry. Which are excellent.

Michel roux Sauces
Excellent reference to sauce up all your meal! I am a big fan of Maître Roux, but this aside this is a great book for those looking to add to their repertoire. Sauces really make the difference. Guest will be impressed and you'll probably never go back to serving plain anything !

Very useful
Excellent descriptions and easy to follow directions. Clear explanations. Interesting background information. Enticing photographs. A fantastic and truly useful reference book for any kitchen.

Inutilisable
Il est bien stipule que le livre est en anglais et cela ne me posait pas de problemes. Par contre, toutes les mesures sont donnees sur base d unites americaines (inches, cups, ounces etc...) qui ne sont pas compatibles avec les apareils de mesure europeens. La seule solution est de tout convertir... Impossible lorsqu'on execute une recette. A fuir donc car inutilisable.
