Reduced salt, hard to find in the shops!
The reduced salt soy sauce is used in a lot of recipe’s and with the other ingredients for Chinese style meals can become too salty. So if I can reduce the salt intake also for health reasons too!

False economy
Very flat salty flavour, little of the umami (savoury) or complexity of naturally brewed and aged soy sauces.I recommend Japanese brand Kikkoman Less Salt soy sauce as used by TV chefs Jamie Oliver and Ching-He Huang. Naturally brewed, free of flavour enhancers, lower in sodium, much more complex flavour. Pricier for a small bottle but available in four sizes up to 1 litre.

Great to have this for day to day cooking. Can’t eat salmon without soy, OJ and honey.
