Delicious!
Delicious EVOO. Nice "peppery" after taste. pleasant aromatic smell. Good color. High polyphenol count so also very healthy. I lov eit on my salads and vegetable. Bottle sent in excellent condition, well packed, sealed properly.

So peppery it makes me cough uncontrollably when I swallow it
Changing from 3 stars to 4 FOR CUSTOMER SERVICEIf you want an extremely peppery, grassy olive oil this is for you. For me it was so peppery that it made me cough uncontrollably. I’ve had to dilute it with a milder olive oil in order to use it, which of course decreases the number of polyphenols which is what I was looking for. Otherwise the taste is fine If you can handle that amount of pepperiness.EDIT!A day or two after posting this review, THE SELLER WROTE TO ME OFFERING A REFUND.This, to me, indicates a conscientious, responsible purveyor, something I admire, particularly these days. I had to decline, since Amazon already refunded my purchase price in November when I bought it but I want people to know the kind of company this is. I’d feel confident buying other products from them.

I like it
From my understanding of the taste of EVOO I believe they are telling the truth on the polyphenol amount also derived in comparison to my last brand of EVOO that was proven to be above 400. This one says 600 or better and I believe it. Only been drinking it for 2 days now though so no tangible results good or bad. It does taste good to me though with the pepper kick as you swallow it. Put this on my salad earlier with a little sprinkle of turmeric and it was awesome. I definitely recommend, plus I live in the Houston area where they are based so I'll dance with the home team.

Compared 3 oils, the classico was the strongest
So I tried three different olive oils that are rated high in polyphenols. Comparing them side by side the classico had the strongest smell and taste and The most pepperiness in the back of the throat which is supposed to be an indication of a high polyphenol content. I would describe this olive oil as on the bitter side however the pamphlet that comes with the oil explain that this is a sign of the early harvest olive oils and how they are able to achieve such a high polyphenol content. While the Amazon listing claimed 800 plus polyphenols there is nothing in the packaging or bottle that indicates it's polyphenol count. But it is the same for the other olive oils as well The bottle does not have any indication of the polyphenols.

Oil!
Used mostly for cooking despite the price and quality meaning I should use it for more than just greasing up a skillet. It had a taste I can't describe but was very strong and needed other flavors to balance it out. Very thick and smooth oil, just not the right taste for me.

Strong Peppery Flavor = Good Stuff!
As the title suggests, this is a 'robust' Extra Virgin Olive Oil (EVOO). Taste is highly subjective, as we all have individual preferences. Personally, I really liked it, but my wife found it a bit too strong when we tried a teaspoonful. Interestingly, when I secretly added some to our salad, she was very pleased with the overall flavor of the salad! Be forewarned that this oil definitely delivers a peppery punch at the back of your throat with a hint of bitterness, which I find very appealing. This flavor profile adds amazing pizazz to salads, toasts, and more. I will definitely use it as a daily phenolic shot and as a finishing oil on a myriad of dishes. Plus, it comes with an amazing spout that allows for great flow control without any mess!

Top quality taste, strong but smooth which means you’re getting more polyphenols.

Not my favorite
I’ve used a few high polyphenol olive oils. Good olive oils are spicy and have a green or grassy flavor. This one was not my favorite. It was bitter- in a way that I’ve never associated with good olive oil. The first impression on tasting it is not good. Not even an olive oil taste- I can’t explain it. Maybe it’s rancid. I don’t know but I do not care for it.
